Dhaba-Style Arhar Dal Fry

Dhaba-Style Arhar Dal Fry

Ingredients:

1 cup Fortune Arhar Dal, 1 onion, finely chopped, 2 tomatoes, chopped, 1 tbsp ginger-garlic paste, 2 green chillies, slit, 1 tsp cumin seeds, 1/2 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp garam masala, 2 tbsp ghee, Fresh coriander leaves, for garnish

Method:

 

  1. Pressure cook the Arhar Dal (Toor Dal) with turmeric and water until soft and creamy. Mash lightly for a luscious texture.
  2. In a heavy-bottomed pan, heat ghee until aromatic. Add cumin seeds and let them sizzle. Toss in green chillies, onions, and ginger-garlic paste. Sauté until golden.
  3. Add tomatoes, red chilli powder, and salt. Cook until the tomatoes melt into a rich, spiced paste.
  4. Stir in the cooked dal, adjust the consistency with water, and simmer for 5 minutes. Sprinkle garam masala for that classic dhaba magic.
  5. Garnish with fresh coriander and serve piping hot with tandoori roti or jeera rice.

Arhar Dal Sambar

Ingredients:

1 cup Fortune Arhar dal, 1 tbsp tamarind pulp, 1 onion, diced, 1 tomato, chopped, 1 cup mixed vegetables (drumsticks, carrots, beans), 2 tbsp sambar powder, 1/2 tsp turmeric powder, 1 tsp mustard seeds, 1 dried red chilli, 8-10 curry leaves, 2 tbsp oil, Fresh coriander leaves, for garnish

Method:

 

  1. Pressure cook Arhar Dal (Toor Dal) with turmeric and water until soft. Mash lightly and set aside.
  2. Boil the vegetables in water with a pinch of salt until tender.
  3. Heat oil in a pan, add mustard seeds, dried red chilli, and curry leaves. Let them crackle.
  4. Toss in onions and sauté until golden, then add tomatoes and sambar powder. Cook until the tomatoes blend into a fragrant masala.
  5. Add the cooked dal, boiled vegetables, and tamarind pulp. Adjust consistency with water and let it simmer for 10 minutes.
  6. Garnish with fresh coriander and serve with steamed rice or fluffy idlis.

 

Mango-Infused Arhar Dal

Mango-Infused Arhar Dal

Ingredients:

1 cup Arhar Dal, 1 ripe mango, peeled and chopped, 1 tsp mustard seeds, 1 dried red chilli, 1/2 tsp cumin powder, 1/4 tsp hing (asafoetida), Salt, to taste, Fresh coriander leaves for garnish

Method:

 

  1. Pressure cook the Arhar Dal with water and salt until it’s soft and creamy.
  2. In a pan, heat some oil and add mustard seeds, dried red chilli, cumin powder, and hing. Let the spices pop and sizzle.
  3. Add the chopped mango and cook until it softens and blends into the spices.
  4. Stir in the cooked Toor Dal, adjust the consistency with water, and simmer for 5 minutes.
  5. Garnish with fresh coriander leaves and serve this sweet and tangy dal with steamed rice for a tropical twist!
